Cranberry Orange Chocolate Mousse

Ingredients
- 1 cup fresh cranberries
- 1/2 cup orange juice
- 1/2 cup sugar
- 1/2 cup water
- Zest from one orange (about 1 Tablespoon)
- 2 bars of Honduras Chocolate Company 80% cacao chocolate, broken into squares
- 1 1/2 cups heavy cream
- 3 large egg whites
- Additional cranberries, halved, for garnish (optional)
- Additional orange zest for garnish (optional)
Directions
Pour cranberries, sugar, water, orange juice and zest into a medium sauce pan and cook over medium heat until berries burst and mixtures thickens, about 10 minutes.
Remove from heat and pour into a strainer combining liquid with chocolate, pressing to remove as much liquid from berry mixture as possible. Place pressed berries into a separate bowl and stir liquid and chocolate until chocolate is melted. If needed, microwave chocolate to fully melt. Set chocolate aside to cool.
Beat egg whites until soft peaks form.
Pour cream into a chilled bowl and whip to a stiff cream.
Combine chocolate with cream and gently fold until combined. Add egg whites and again, fold until combined.
Gently spoon into parfait glasses layering the mousse with the pressed berry mixture. (Note: mousse can also be served alone; you will have more mousse than berry mixture) Garnish with cranberries and orange zest. Chill a minimum of 1 hour up to one day. Serves 6.
